Beatriz George, PhD, RD, MAJ, SP, USA, is a United States Army Registered Dietitian and currently assigned as the Chief of the Education and Research Branch, Department of Nutritional Medicine, Brooke Army Medical Center MAJ George completed her undergraduate degree from Michigan State University (BS Dietetics), her master’s degree from Baylor University (MS Human Nutrition) and her doctorate degree from Michigan State University (PhD Human Nutrition). She completed her dietetic internship at Walter Reed National Military Medical Center where she defended her master’s project, “The Accuracy of Circumference Measurements in Estimating Percent Body Fat in Service members with Lower Limb Amputation.” Most recently, she defended her doctoral dissertation, “Determinants of Eating Behaviors of US Army ROTC Cadets at Midwestern Universities.”
MAJ George previously served Assistant Professor and Research Director for the US Army-Baylor University Master’s Program in Nutrition (MPN), Medical Center of Excellence, Fort Sam Houston, TX. At the Master’s Program in Nutrition, MAJ George oversaw fifteen Master’s level research projects per year, serving as research chair and committee member for Master’s level research projects, and serving as the primary instructor for research curriculum. Prior to pursing doctoral studies through the Army’s Long Term Health and Education Training Program, MAJ George served as the Chief of the Nutrition Outpatient Clinic and the Assistant Chief of the Nutrition Care Division at Reynolds Army Community Hospital, Fort Sill, OK. In that post, she oversaw the development and implementation of nutrition education programs to support the Army Body Composition Program, the Pregnancy Post-Partum Physical Training Program, the OB-GYN Breastfeeding Program, and the Child Youth Services Child and Adult Care Food Program. While at Fort Sill, she completed her training as a Certified Lactation Counselor and a Board Certified Sports Dietitian. These certifications enabled her to better serve the diverse community at Fort Sill.
In 2015, MAJ George earned her first Army Achievement Medal for the development, production, and delivery of nutrition education materials to over 1200 students at Freedom Elementary at Fort Sill. In addition, she earned over $20,000 in grants from the System for Health Awards Program to implement nutrition programs at Fort Sill. Prior to her departure from Fort Sill, MAJ George was awarded the Army Meritorious Service Medal for her 4 year tenure at Fort Sill, as well as an Army Commendation Medal for the development of curriculum for the Pregnancy Post-Partum Physical Training Program and the planning and development of the first installation-wide Lactation Resource Room.
In 2019, MAJ George completed her Doctorate in Human Nutrition with Dr. Won Song at Michigan State University. During her time at Michigan State, she assisted with the development and implementation of an online Nutrition Research Methods course; facilitated a collaborative research agreements with the US Army Research Institute of Environmental Medicine; developed partnerships with the US Army Cadet Command 7th Brigade, Michigan State University Army ROTC, and Western Michigan University Army ROTC; earned funding ($7900) to support her doctoral dissertation project; mentored 3 students to develop and present undergraduate research posters at Michigan State University; presented her work at national conferences (Academy of Nutrition and Dietetics FNCE; American Society for Nutrition); and successfully defended her doctoral dissertation, “Determinants of Eating Behaviors of US Army ROTC Cadets at Midwestern Universities.”
During her tenure at the Medical Center of Excellence, MAJ George earned three Army Commendation Medals (2020, 2021, 2022) and one Army Achievement Medal (2023) for serving as a co-chair and planning committee member for the Medical Center of Excellence Graduate School Research and Education Symposium. MAJ George was also awarded the Army Meritorious Service Medal for her 3.5 year tenure at the Master’s Program in Nutrition.
